- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Carrot - 1 medium, julienned
- Bell pepper - 1/2, sliced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Chili oil - 1 teaspoon (optional for extra heat)
Steps
- Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add minced garlic, grated ginger, and sliced red chili pepper. Sauté for about 2-3 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer. Add soy sauce, julienned carrot, and sliced bell pepper. Cook for about 5-7 minutes until vegetables are tender.
