  • Red chili pepper - 1, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, julienned
  • Bell pepper - 1/2, sliced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Chili oil - 1 teaspoon (optional for extra heat)

Steps

  1. Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add minced garlic, grated ginger, and sliced red chili pepper. Sauté for about 2-3 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a simmer. Add soy sauce, julienned carrot, and sliced bell pepper. Cook for about 5-7 minutes until vegetables are tender.
