- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Szechuan peppercorns - 1 teaspoon, ground
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a mixing bowl, combine minced garlic, ginger, soy sauce, Szechuan peppercorns, chili powder, cumin, coriander, sesame oil, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece.
- Lightly brush the skewers with vegetable oil to prevent sticking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has a nice char.
- Remove from the grill and let rest for a few minutes before serving.
