Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Szechuan peppercorns - 1 teaspoon, ground
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a mixing bowl, combine minced garlic, ginger, soy sauce, Szechuan peppercorns, chili powder, cumin, coriander, sesame oil, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece.
  5. Lightly brush the skewers with vegetable oil to prevent sticking.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked through and has a nice char.
  7. Remove from the grill and let rest for a few minutes before serving.
