Ingredients

  • Ground lamb - 250 grams
  • All-purpose flour - 200 grams
  • Yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 100 ml
  • Salt - 5 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Chili flakes - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Spring onions - 2, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Egg - 1, for egg wash

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 30 minutes.
  3. Meanwhile, in a frying pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  4. Add ground lamb, chili flakes, soy sauce, and spring onions to the pan. Cook until the lamb is browned and cooked through (about 8-10 minutes). Stir in chopped cilantro and let it cool.
  5. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  6. Place a spoonful of the lamb mixture in the center of each dough circle. Fold the edges over the filling to seal and shape into a bun.
  7. Preheat the oven to 180°C (350°F). Place the buns on a baking tray lined with parchment paper.
  8. Beat the egg and brush the tops of the buns. Bake for 15-20 minutes or until golden brown.
  9. Remove from the oven and let them cool slightly before serving.
