- Ground lamb - 250 grams
- All-purpose flour - 200 grams
- Yeast - 5 grams
- Sugar - 10 grams
- Warm water - 100 ml
- Salt - 5 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Chili flakes - 1 teaspoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Spring onions - 2, finely chopped
- Cilantro - 2 tablespoons, chopped
- Egg - 1, for egg wash
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 30 minutes.
- Meanwhile, in a frying pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add ground lamb, chili flakes, soy sauce, and spring onions to the pan. Cook until the lamb is browned and cooked through (about 8-10 minutes). Stir in chopped cilantro and let it cool.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the lamb mixture in the center of each dough circle. Fold the edges over the filling to seal and shape into a bun.
- Preheat the oven to 180°C (350°F). Place the buns on a baking tray lined with parchment paper.
- Beat the egg and brush the tops of the buns. Bake for 15-20 minutes or until golden brown.
- Remove from the oven and let them cool slightly before serving.
