Ingredients

  • Ginger - 1 teaspoon, grated
  • Chili paste (or Sriracha) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat your grill or grill pan to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then pat dry with a paper towel.
  3. In a bowl, mix together olive oil, soy sauce, rice vinegar, minced garlic, grated ginger, chili paste, and sesame oil to create the marinade.
  4. Add the eggplant slices to the marinade and let them soak for at least 10 minutes, turning occasionally to ensure even coating.
  5. Place the marinated eggplant slices on the grill and cook for 4-5 minutes on each side, or until they are tender and have nice grill marks.
