  • Ginger, grated - 1 tablespoon
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Green onions, chopped - 2 stalks
  • Mushrooms, sliced (shiitake or button) - 100 grams
  • Bell pepper, sliced - 1 medium
  • Spinach, fresh - 100 grams
  • Lime juice - 1 tablespoon
  • Cilantro, chopped - for garnish
  • Salt - to taste

Steps

  1. In a pot, heat coconut oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  2. Add sliced mushrooms and bell pepper to the pot, cooking for another 3-4 minutes until softened.
  3. Pour in the fish stock or water and bring to a simmer.
  4. Stir in the red chili flakes and soy sauce, allowing the mixture to simmer for 5 minutes.
  5. Add the fish fillets gently to the pot, cooking for 5-7 minutes until they are opaque and flaky.
  6. In the last 2 minutes of cooking, add the fresh spinach and chopped green onions, stirring until the spinach wilts.
  7. Remove from heat and add lime juice, seasoning with salt to taste.
  8. Serve hot, garnished with chopped cilantro.
