- Green onions, chopped - 2 stalks
- Mushrooms, sliced (shiitake or button) - 100 grams
- Bell pepper, sliced - 1 medium
- Spinach, fresh - 100 grams
- Lime juice - 1 tablespoon
- Cilantro, chopped - for garnish
- Salt - to taste
Steps
- In a pot, heat coconut oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add sliced mushrooms and bell pepper to the pot, cooking for another 3-4 minutes until softened.
- Pour in the fish stock or water and bring to a simmer.
- Stir in the red chili flakes and soy sauce, allowing the mixture to simmer for 5 minutes.
- Add the fish fillets gently to the pot, cooking for 5-7 minutes until they are opaque and flaky.
