Steps
- Peel and cut the sweet potatoes into thick fries. Soak them in cold water for 30 minutes to remove excess starch.
- In a mixing bowl, combine flour, cornstarch, baking powder, chili powder, salt, black pepper, garlic powder, paprika, and ground ginger to create the batter.
- Gradually add cold water to the dry mixture, whisking until a smooth batter forms. Let it rest for about 10 minutes.
- Heat vegetable oil in a deep pan over medium-high heat (about 180°C or 350°F).
- Drain the sweet potatoes and pat them dry with a paper towel. Fry the sweet potato fries in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, seasoning with salt immediately.
- Dip the fish fillets into the batter, allowing excess to drip off. Carefully place them into the hot oil and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
- Serve the spicy fish with sweet potato fries, garnished with fresh cilantro and lemon wedges.
