  • Eggplant - 300 grams

  • Green bell pepper - 1 medium

  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Preheat the grill or barbecue to medium-high heat.
  2. Cut the eggplant into 2.5 cm cubes and the bell peppers into similar-sized pieces.
  3. In a bowl, mix together garlic, soy sauce, chili oil, sesame oil, ground cumin, ground coriander, black pepper, salt, honey, and lemon juice to create the marinade.
  4. Add the eggplant and bell peppers to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
  5. Thread the marinated eggplant and bell pepper pieces alternately onto the skewers.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and have grill marks.
  7. Remove the skewers from the grill and allow to cool slightly before serving.
