Ingredients
- Duck breast - 300 grams
- Mixed salad greens (e.g., arugula, spinach, and romaine) - 150 grams
- Cucumber - 1 medium, julienned
- Red bell pepper - 1, thinly sliced
- Carrot - 1 medium, shredded
- Coriander (cilantro) - 20 grams, chopped
- Spring onions - 2, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili garlic sauce - 1 teaspoon
- Honey - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Crushed peanuts - 30 grams, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.
- Place the duck breast skin-side down in a cold, oven-safe skillet. Turn the heat to medium-low and cook for 6-8 minutes to render the fat and crisp the skin.
- Once the skin is golden brown, flip the duck breast over and transfer the skillet to the preheated oven. Roast for 10-12 minutes for medium-rare or until your desired doneness.
- Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
- In a large bowl, combine the mixed salad greens, cucumber, red bell pepper, carrot, coriander, and spring onions.
- In a separate small bowl, whisk together sesame oil, soy sauce, rice vinegar, chili garlic sauce, and honey to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Divide the salad between two plates, top with sliced duck, and sprinkle with crushed peanuts before serving.
