Ingredients

  • Duck breast - 300 grams
  • Mixed salad greens (e.g., arugula, spinach, and romaine) - 150 grams
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 medium, shredded
  • Coriander (cilantro) - 20 grams, chopped
  • Spring onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili garlic sauce - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Crushed peanuts - 30 grams, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.
  3. Place the duck breast skin-side down in a cold, oven-safe skillet. Turn the heat to medium-low and cook for 6-8 minutes to render the fat and crisp the skin.
  4. Once the skin is golden brown, flip the duck breast over and transfer the skillet to the preheated oven. Roast for 10-12 minutes for medium-rare or until your desired doneness.
  5. Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
  6. In a large bowl, combine the mixed salad greens, cucumber, red bell pepper, carrot, coriander, and spring onions.
  7. In a separate small bowl, whisk together sesame oil, soy sauce, rice vinegar, chili garlic sauce, and honey to create the dressing.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Divide the salad between two plates, top with sliced duck, and sprinkle with crushed peanuts before serving.
