- Duck necks - 400 grams
- Sichuan peppercorns - 1 tablespoon
- Dried red chilies - 5 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 inch, sliced
- Soy sauce - 3 tablespoons
- Rice vinegar - 1 tablespoon
- Chili oil - 2 tablespoons
- Sugar - 1 teaspoon
- Star anise - 2 pieces
- Water - 500 milliliters
- Green onions - 2 stalks, chopped for garnish
Steps
- In a pot, bring 500 milliliters of water to a boil and add the duck necks. Blanch for 5 minutes, then drain and set aside.
- In the same pot, heat 2 tablespoons of chili oil over medium heat. Add Sichuan peppercorns and dried red chilies, stirring for 1-2 minutes until fragrant.
- Add minced garlic and sliced ginger to the pot, cooking for another minute until golden brown.
- Stir in the soy sauce, rice vinegar, sugar, and star anise, mixing well.
- Return the blanched duck necks to the pot, ensuring they are fully coated in the sauce.
- Add enough water to cover the duck necks and bring to a simmer. Cover and cook for 20-25 minutes, allowing the flavors to meld.
- Once done, remove from heat and let cool slightly. Garnish with chopped green onions before serving.
