Ingredients

  • Boneless chicken thighs - 300 grams, cut into bite-sized pieces
  • Eggplant - 200 grams, diced
  • Green bell pepper - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. In a bowl, combine the chicken pieces with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and black pepper. Mix well and let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the diced eggplant and green bell pepper to the pan. Stir-fry for about 5-6 minutes until the vegetables are tender.
  5. Return the cooked chicken to the pan. Add the remaining soy sauce, chili paste, and sesame oil. Stir everything together and cook for an additional 2-3 minutes to heat through and combine flavors.
  6. Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped spring onions.
