Ingredients
- Boneless chicken thighs - 300 grams, cut into bite-sized pieces
- Eggplant - 200 grams, diced
- Green bell pepper - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2, chopped (for garnish)
Steps
- In a bowl, combine the chicken pieces with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and black pepper. Mix well and let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the diced eggplant and green bell pepper to the pan. Stir-fry for about 5-6 minutes until the vegetables are tender.
- Return the cooked chicken to the pan. Add the remaining soy sauce, chili paste, and sesame oil. Stir everything together and cook for an additional 2-3 minutes to heat through and combine flavors.
- Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped spring onions.
