- Chicken breast - 300 grams, diced
- Cashews - 100 grams, unsalted
- Bell pepper (red) - 1 medium, sliced
- Bell pepper (green) - 1 medium, sliced
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Green onions - 2, chopped for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, combine the diced chicken breast with cornstarch, a pinch of salt, and black pepper. Mix well and let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- In the same pan, add the remaining vegetable oil, then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the sliced onions and bell peppers to the pan, and stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.
- Return the cooked chicken to the pan and add the cashews, soy sauce, chili paste, sesame oil, and water. Stir well to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- Taste and adjust seasoning with salt and pepper if necessary. Remove from heat.
- Serve hot, garnished with chopped green onions, and enjoy with steamed rice or noodles.
