Ingredients

  • Chicken breast - 300 grams, diced
  • Cashews - 100 grams, unsalted
  • Bell pepper (red) - 1 medium, sliced
  • Bell pepper (green) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Green onions - 2, chopped for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the diced chicken breast with cornstarch, a pinch of salt, and black pepper. Mix well and let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the remaining vegetable oil, then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  4. Add the sliced onions and bell peppers to the pan, and stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.
  5. Return the cooked chicken to the pan and add the cashews, soy sauce, chili paste, sesame oil, and water. Stir well to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  6. Taste and adjust seasoning with salt and pepper if necessary. Remove from heat.
  7. Serve hot, garnished with chopped green onions, and enjoy with steamed rice or noodles.
