Ingredients

  • Chicken breast - 300 grams, diced
  • Jasmine rice - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red bell pepper - 1, diced
  • Green onions - 2, sliced
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon (adjust to taste)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 300 milliliters
  • Sesame oil - 1 teaspoon
  • Cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a medium saucepan, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.
  3. While the rice cooks, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the diced chicken breast to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until the chicken is browned and cooked through.
  5. Stir in the diced red bell pepper, soy sauce, and chili paste. Cook for an additional 3-4 minutes, stirring frequently until the bell pepper is slightly tender.
  6. Fluff the cooked rice with a fork and add it to the skillet, tossing everything together to combine. Drizzle with sesame oil and stir in the sliced green onions.
  7. Serve hot, garnished with fresh cilantro.
