  • Bell pepper (red) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli - 100 grams, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sriracha sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, sliced (for garnish)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook it according to package instructions.
  2. In a large skillet or wok, heat olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and grated ginger to the skillet, stirring for 1 minute until fragrant.
  4. Add the sliced bell pepper, julienned carrot, and chopped broccoli to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the soy sauce, Sriracha, and honey. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes to heat through.
  6. Once the rice is cooked, fluff it with a fork and divide it between two bowls. Top with the spicy chicken and vegetable mixture.
  7. Garnish with sliced green onions and sesame seeds before serving.
