Ingredients

  • Boneless chicken thighs - 300 grams
  • Jasmine rice - 150 grams

  • Red chili flakes - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Green onions - 2, chopped
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Chicken broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the chicken thighs with soy sauce, oyster sauce, red chili flakes, minced garlic, and ginger. Mix well and let marinate for at least 15 minutes.
  2. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the rinsed rice and toast for about 2 minutes, stirring frequently.
  4. Add chicken broth to the rice, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the rice is tender.
  5. In a large skillet or wok, heat the remaining tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  6. Add sliced bell pepper and julienned carrot to the skillet, stirring for an additional 3-4 minutes until vegetables are tender-crisp.
