Ingredients

  • Coconut aminos - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Red chili pepper - 1, sliced (adjust for spice preference)
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Pak choi - 100 grams, chopped
  • Cilantro - a handful, for garnish
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the sliced beef to the pot, cooking until browned on all sides, about 5 minutes.
  3. Pour in the beef bone broth and bring to a simmer.
  4. Stir in coconut aminos, sliced chili pepper, and a pinch of salt. Allow the soup to simmer for 10 minutes to deepen the flavors.
  5. Add the mushrooms, carrot, and pak choi to the pot. Continue to simmer for an additional 5-7 minutes until the vegetables are tender.
