Ingredients
- Quinoa - 100 grams
- Water - 250 ml
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Almond flour - 50 grams
- Coconut oil - for frying
Steps
- Rinse the quinoa under cold water and combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until water is absorbed and quinoa is fluffy.
- In a large bowl, combine the cooked quinoa, egg, green onion, garlic, ginger, coconut aminos, sesame oil, coriander powder, cumin powder, black pepper, salt, and almond flour. Mix until well combined.
- Preheat a skillet over medium heat and add coconut oil for frying.
- Using your hands, form the quinoa mixture into small balls, about the size of a golf ball.
- Fry the quinoa balls in the skillet for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- Serve warm as a snack or appetizer, optionally with a dipping sauce.
