Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Egg - 1 large
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Almond flour - 50 grams
  • Coconut oil - for frying

Steps

  1. Rinse the quinoa under cold water and combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until water is absorbed and quinoa is fluffy.
  2. In a large bowl, combine the cooked quinoa, egg, green onion, garlic, ginger, coconut aminos, sesame oil, coriander powder, cumin powder, black pepper, salt, and almond flour. Mix until well combined.
  3. Preheat a skillet over medium heat and add coconut oil for frying.
  4. Using your hands, form the quinoa mixture into small balls, about the size of a golf ball.
  5. Fry the quinoa balls in the skillet for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  6. Serve warm as a snack or appetizer, optionally with a dipping sauce.
