  • Chili paste (like Doubanjiang) - 1 tablespoon
  • Peanut butter - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil, salt, and pepper on the cut sides of the squash. Place cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  4. While the squash is roasting, heat a large skillet over medium heat and add the ground pork or chicken. Cook until browned, about 5-7 minutes.

  7. Once the spaghetti squash is cooked, use a fork to scrape out the strands into a bowl.
  8. Toss the spaghetti squash strands with the meat mixture until well combined.
