Ingredients
- Soybeans - 100 grams
- Water - 1 liter (for soaking soybeans)
- Water - 1 liter (for making soy milk)
- Salt - 1/2 teaspoon
- Youtiao flour - 200 grams
- Baking powder - 1 teaspoon
- Water - 100 ml (for youtiao dough)
- Sugar - 1 teaspoon
- Oil - for frying (about 500 ml)
Steps
- Soak the soybeans in 1 liter of water for at least 8 hours or overnight.
- After soaking, drain the soybeans and blend them with 1 liter of fresh water until smooth.
- Strain the blended mixture through a cheesecloth or fine sieve to extract the soy milk, discarding the leftover pulp.
- In a saucepan, bring the soy milk to a boil, then reduce heat and simmer for 5 minutes. Add salt and stir well.
- For the youtiao, mix the youtiao flour, baking powder, and sugar in a bowl. Gradually add 100 ml of water and knead until a smooth dough forms.
- Let the dough rest for 30 minutes, covered with a damp cloth.
- After resting, divide the dough into small pieces and roll each piece into a long strip, then stack two strips on top of each other and twist them together.
- Heat oil in a deep pan to 180°C (350°F). Fry the twisted dough pieces until golden brown and puffed, about 3-4 minutes, turning occasionally.
- Drain the youtiao on paper towels and serve hot alongside the freshly made soy milk.
