Ingredients

  • Dried soybeans - 100 grams
  • Water - 1 liter
  • Salt - 1/4 teaspoon
  • Sweetener (optional, e.g., maple syrup or agave) - to taste

Steps

  1. Rinse the dried soybeans under cold water and soak them in a bowl with enough water to cover them for at least 8 hours or overnight.
  2. After soaking, drain and rinse the soybeans again. Place them in a blender with 1 liter of fresh water and blend until smooth.
  3. Strain the blended mixture through a nut milk bag or a fine mesh sieve into a large pot, pressing down to extract as much liquid as possible. Discard the remaining soybean pulp or save it for other recipes.
  4. Heat the strained soy milk over medium heat, stirring frequently to prevent scalding. Bring it to a gentle boil, then reduce the heat and simmer for about 5-10 minutes.
  5. Add salt and sweetener to taste, stirring well to combine. Remove from heat and let it cool slightly before serving.
