Ingredients

  • Glutinous rice flour - 100 grams
  • Icing sugar - 30 grams
  • Coconut milk - 80 ml
  • Vegetable oil - 20 ml
  • Red bean paste - 50 grams
  • Matcha powder - 5 grams
  • Cornstarch - for dusting

Steps

  1. In a mixing bowl, combine glutinous rice flour, icing sugar, and matcha powder.
  2. Add coconut milk and vegetable oil to the dry ingredients and mix until a smooth dough forms.
  3. Divide the dough into two equal parts and shape each into a ball.
  4. Dust your working surface with cornstarch and flatten each dough ball into a disc about 10 cm in diameter.
  5. Place 25 grams of red bean paste in the center of each disc.
  6. Carefully fold the edges of the dough over the filling and pinch to seal, forming a smooth ball.
  7. Dust the mooncake with cornstarch to prevent sticking, then place it in a mooncake mold and press firmly.
  8. Release the mooncake from the mold and set aside. Repeat with the second mooncake.
  9. Refrigerate the mooncakes for at least 30 minutes before serving.
