Ingredients
- Shrimp (peeled and deveined) - 250 grams
- Cucumber (thinly sliced) - 100 grams
- Red bell pepper (julienned) - 50 grams
- Carrot (shredded) - 50 grams
- Green onions (chopped) - 2 stalks
- Cilantro (chopped) - 2 tablespoons
- Sichuan peppercorns - 1 teaspoon
- Chili oil - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- In a small pan, dry roast the Sichuan peppercorns over medium heat until fragrant, about 2-3 minutes. Remove from heat and grind them into a powder using a mortar and pestle or spice grinder.
- In a bowl, combine the chili oil, rice vinegar, soy sauce, minced garlic, grated ginger, ground Sichuan pepper, and sesame oil. Mix well to create the dressing.
- In a pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooked shrimp, cucumber, red bell pepper, carrot, green onions, and cilantro.
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- Serve the salad chilled or at room temperature, garnished with additional cilantro if desired.
