Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Cucumber (thinly sliced) - 100 grams
  • Red bell pepper (julienned) - 50 grams
  • Carrot (shredded) - 50 grams
  • Green onions (chopped) - 2 stalks
  • Cilantro (chopped) - 2 tablespoons
  • Sichuan peppercorns - 1 teaspoon
  • Chili oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce (gluten-free) - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a small pan, dry roast the Sichuan peppercorns over medium heat until fragrant, about 2-3 minutes. Remove from heat and grind them into a powder using a mortar and pestle or spice grinder.
  2. In a bowl, combine the chili oil, rice vinegar, soy sauce, minced garlic, grated ginger, ground Sichuan pepper, and sesame oil. Mix well to create the dressing.
  3. In a pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process.
  4. In a large mixing bowl, combine the cooked shrimp, cucumber, red bell pepper, carrot, green onions, and cilantro.
  5. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  6. Serve the salad chilled or at room temperature, garnished with additional cilantro if desired.
