- Dried red chilies - 4-5 pieces

- Ginger - 1 inch, minced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Cooking oil - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - a handful, for garnish
Steps
- Heat cooking oil in a large pan or wok over medium heat.
- Add Sichuan peppercorns and dried red chilies, stir-frying for about 30 seconds until fragrant.
- Add minced garlic and ginger to the pan, cooking for another minute until golden.
- Increase heat to high and add the shrimp, squid, and mussels to the pan, stirring quickly to combine.
- Pour in the soy sauce, chili oil, and sprinkle with sugar, stirring well to coat the seafood.
- Cook for 5-7 minutes, or until the seafood is cooked through and mussels have opened.
- Season with salt and black pepper to taste.
- Add chopped spring onions and toss everything together for 1 minute.
- Remove from heat and garnish with fresh coriander before serving.
