  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 4-5 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Cooking oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - a handful, for garnish

Steps

  1. Heat cooking oil in a large pan or wok over medium heat.
  2. Add Sichuan peppercorns and dried red chilies, stir-frying for about 30 seconds until fragrant.
  3. Add minced garlic and ginger to the pan, cooking for another minute until golden.
  4. Increase heat to high and add the shrimp, squid, and mussels to the pan, stirring quickly to combine.
  5. Pour in the soy sauce, chili oil, and sprinkle with sugar, stirring well to coat the seafood.
  6. Cook for 5-7 minutes, or until the seafood is cooked through and mussels have opened.
  7. Season with salt and black pepper to taste.
  8. Add chopped spring onions and toss everything together for 1 minute.
  9. Remove from heat and garnish with fresh coriander before serving.
