- Pork shoulder, thinly sliced - 300 grams
- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 5 to 6 pieces
- Garlic, minced - 3 cloves
- Ginger, minced - 1 tablespoon
- Soy sauce - 2 tablespoons
- Shaoxing wine (or rice wine) - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 3 tablespoons
- Green onions, chopped - 2 stalks
- Bell pepper, sliced - 1 medium
- Carrot, julienned - 1 medium
- Salt - to taste
Steps
- In a bowl, combine the sliced pork with soy sauce, Shaoxing wine, and cornstarch. Mix well and let it marinate for at least 15 minutes.
- Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat. Add Sichuan peppercorns and dried red chilies, stirring until fragrant, about 1 minute.
- Add the marinated pork to the pan, and cook for about 5-7 minutes until the pork is browned and cooked through, stirring frequently.
- Add the minced garlic and ginger to the pan, stirring for another minute until aromatic.
- Add the sliced bell pepper and julienned carrot, stir-frying for about 3-4 minutes until the vegetables are tender-crisp.
- Season with salt to taste, and toss in chopped green onions just before serving.
- Serve hot with steamed rice.
