Ingredients

  • Whole fish (e.g., tilapia or trout) - 500 grams
  • Sichuan peppercorns - 1 tablespoon
  • Dried red chilies - 10 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce (Halal) - 2 tablespoons
  • Chili oil - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill to medium-high heat.
  2. Rinse the whole fish under cold water and pat it dry with paper towels.
  3. In a small pan, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and dried red chilies, frying until fragrant (about 2 minutes).
