- Sichuan peppercorns - 1 tablespoon
- Dried red chilies - 10 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Soy sauce (Halal) - 2 tablespoons
- Chili oil - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill to medium-high heat.
- Rinse the whole fish under cold water and pat it dry with paper towels.
- In a small pan, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and dried red chilies, frying until fragrant (about 2 minutes).
- Remove from heat and add minced garlic, grated ginger, soy sauce, chili oil, lemon juice, salt, and black pepper. Mix well to create a marinade.
- Place the fish in a large dish and pour the marinade over it, ensuring it’s well-coated. Let it marinate for at least 15 minutes.
