Ingredients

  • Green beans - 400 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Sichuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Spring onions - 2, chopped for garnish

Steps

  1. Wash and trim the green beans, cutting them into 5 cm lengths.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the green beans to the skillet and stir-fry for about 5-7 minutes until they are blistered and tender-crisp. Remove the beans from the skillet and set aside.
  4. In the same skillet, add the minced garlic, grated ginger, Sichuan peppercorns, and red chili flakes. Stir-fry for about 30 seconds until fragrant.
  5. Return the green beans to the skillet, add the soy sauce and sesame oil, and toss everything together for another 2-3 minutes, ensuring the beans are well coated.
  6. Taste and adjust the salt if necessary, then remove from heat.
  7. Garnish with chopped spring onions before serving.
