- Red chili flakes - 1 teaspoon
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Spring onions - 2, chopped for garnish
Steps
- Wash and trim the green beans, cutting them into 5 cm lengths.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the green beans to the skillet and stir-fry for about 5-7 minutes until they are blistered and tender-crisp. Remove the beans from the skillet and set aside.
- In the same skillet, add the minced garlic, grated ginger, Sichuan peppercorns, and red chili flakes. Stir-fry for about 30 seconds until fragrant.
- Return the green beans to the skillet, add the soy sauce and sesame oil, and toss everything together for another 2-3 minutes, ensuring the beans are well coated.
- Taste and adjust the salt if necessary, then remove from heat.
- Garnish with chopped spring onions before serving.
