Ingredients

  • White fish fillet (e.g., tilapia or cod) - 300 grams
  • Cornstarch - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooking oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 5-6 pieces
  • Doubanjiang (Sichuan chili bean paste) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Spring onions - 2, chopped
  • Coriander leaves - for garnish

Steps

  1. Rinse and pat dry the fish fillets, then cut them into bite-sized pieces.
  2. In a bowl, mix the fish pieces with cornstarch, salt, and black pepper. Allow to marinate for about 10 minutes.
  3. Heat 2 tablespoons of cooking oil in a skillet over medium heat. Once hot, add the fish pieces and fry until golden brown on both sides, about 3-4 minutes. Remove and set aside.
  4. In the same skillet, add 1 tablespoon of cooking oil. Add minced garlic, minced ginger, Sichuan peppercorns, and dried red chilies. Sauté for 1-2 minutes until fragrant.
  5. Stir in the doubanjiang and cook for another minute, then add the soy sauce and rice vinegar, stirring well.
  6. Return the fried fish to the skillet, gently tossing to coat with the sauce. Cook for an additional 2-3 minutes until everything is heated through.
  7. Garnish with chopped spring onions and coriander leaves before serving.
