- White fish fillet (e.g., tilapia or cod) - 300 grams
- Cornstarch - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cooking oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 5-6 pieces
- Doubanjiang (Sichuan chili bean paste) - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Spring onions - 2, chopped
- Coriander leaves - for garnish
Steps
- Rinse and pat dry the fish fillets, then cut them into bite-sized pieces.
- In a bowl, mix the fish pieces with cornstarch, salt, and black pepper. Allow to marinate for about 10 minutes.
- Heat 2 tablespoons of cooking oil in a skillet over medium heat. Once hot, add the fish pieces and fry until golden brown on both sides, about 3-4 minutes. Remove and set aside.
- In the same skillet, add 1 tablespoon of cooking oil. Add minced garlic, minced ginger, Sichuan peppercorns, and dried red chilies. Sauté for 1-2 minutes until fragrant.
- Stir in the doubanjiang and cook for another minute, then add the soy sauce and rice vinegar, stirring well.
- Return the fried fish to the skillet, gently tossing to coat with the sauce. Cook for an additional 2-3 minutes until everything is heated through.
- Garnish with chopped spring onions and coriander leaves before serving.
