Ingredients

  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 3-4 pieces
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Green onions - 2 stalks, chopped
  • Bell pepper (red or green) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Water - 150 ml

Steps

  1. Rinse the fish fillets under cold water and pat them dry. Cut them into bite-sized pieces and marinate with 1 tablespoon of soy sauce and cornstarch for 10 minutes.
  2. In a large skillet or wok, heat vegetable oil over medium heat. Add Sichuan peppercorns and dried red chili peppers, cooking for 1-2 minutes until fragrant.
  3. Add minced garlic and ginger to the skillet, stirring for another minute until aromatic.
  4. Add sliced bell pepper and julienned carrot to the skillet, sautéing for 3-4 minutes until they start to soften.
  5. Gently add the marinated fish pieces to the skillet, cooking for 5-7 minutes until the fish is cooked through and flakes easily with a fork.
  6. Pour in the remaining soy sauce, rice vinegar, sesame oil, and water. Stir gently to combine and simmer for an additional 3-4 minutes.
  7. Garnish with chopped green onions before serving.
