  • Sichuan peppercorns - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Scallions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine soy sauce, minced garlic, grated ginger, honey, rice vinegar, chili flakes, sesame oil, salt, and black pepper to create a marinade.
  3. Add the chicken wings to the marinade and mix well, ensuring each wing is coated. Let them marinate for at least 20 minutes.
  4. While the wings are marinating, toast the Sichuan peppercorns in a dry skillet over medium heat for 2-3 minutes until fragrant.
  5. Once toasted, crush the peppercorns using a mortar and pestle or a spice grinder.
  6. Line a baking tray with parchment paper and arrange the marinated wings in a single layer.
  7. Sprinkle the crushed Sichuan peppercorns over the wings.
  8. Bake in the preheated oven for 25-30 minutes, turning them halfway through until they are crispy and golden brown.
  9. Remove from the oven and garnish with chopped scallions before serving.
