Ingredients

  • Cooked jasmine rice - 300 grams (preferably day-old)
  • Boneless chicken breast - 200 grams, diced
  • Eggs - 2, beaten
  • Sichuan peppercorns - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onion - 2, chopped
  • Carrot - 1 medium, diced
  • Green peas - 50 grams (fresh or frozen)
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of oil and add the Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant.
  3. Add the minced garlic and ginger to the skillet; stir-fry for another 30 seconds.
  4. Add the diced carrot and green peas, and stir-fry for 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  6. Add the cooked rice to the skillet, followed by the cooked chicken, soy sauce, chili oil, and chopped spring onion. Stir-fry everything together for about 5-7 minutes until well combined and heated through.
  7. Season with salt and black pepper to taste. Serve hot.
