- Cooked jasmine rice - 300 grams (preferably day-old)
- Boneless chicken breast - 200 grams, diced
- Eggs - 2, beaten
- Sichuan peppercorns - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onion - 2, chopped
- Carrot - 1 medium, diced
- Green peas - 50 grams (fresh or frozen)
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil and add the Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant.
- Add the minced garlic and ginger to the skillet; stir-fry for another 30 seconds.
- Add the diced carrot and green peas, and stir-fry for 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked rice to the skillet, followed by the cooked chicken, soy sauce, chili oil, and chopped spring onion. Stir-fry everything together for about 5-7 minutes until well combined and heated through.
- Season with salt and black pepper to taste. Serve hot.
