- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 4-5, adjusted to taste
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Bell pepper - 1 medium, sliced
- Onion - 1 small, sliced
- Green onions - 2, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- In a bowl, combine the sliced chicken breast with cornstarch, soy sauce, and a pinch of salt. Mix well and let it marinate for 15 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the skillet, stir-frying until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the remaining tablespoon of oil, then add minced garlic, ginger, Sichuan peppercorns, and dried red chilies. Stir-fry for about 1 minute until fragrant.
- Add the sliced bell pepper and onion to the skillet, cooking for another 3-4 minutes until the vegetables are tender.
- Return the cooked chicken to the skillet and add chili paste. Stir everything together for 2-3 minutes, allowing the flavors to meld.
- Drizzle with sesame oil and garnish with chopped green onions before serving.
