Ingredients

  • Chicken breast - 300 grams, sliced thinly
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 4-5, adjusted to taste
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Bell pepper - 1 medium, sliced
  • Onion - 1 small, sliced
  • Green onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a bowl, combine the sliced chicken breast with cornstarch, soy sauce, and a pinch of salt. Mix well and let it marinate for 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated chicken to the skillet, stir-frying until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the remaining tablespoon of oil, then add minced garlic, ginger, Sichuan peppercorns, and dried red chilies. Stir-fry for about 1 minute until fragrant.
  5. Add the sliced bell pepper and onion to the skillet, cooking for another 3-4 minutes until the vegetables are tender.
  6. Return the cooked chicken to the skillet and add chili paste. Stir everything together for 2-3 minutes, allowing the flavors to meld.
  7. Drizzle with sesame oil and garnish with chopped green onions before serving.
