Ingredients

  • Beef (sirloin or flank) - 250 grams, thinly sliced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 5 pieces, adjust to taste
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, minced
  • Soy sauce (low sodium) - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Bell pepper (red or green) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Spring onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, and a pinch of salt. Marinate for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add Sichuan peppercorns and dried red chilies, stirring until fragrant.
  3. Add the marinated beef to the wok, spreading it out to ensure even cooking. Stir-fry for about 5-7 minutes until the beef is browned and cooked through. Remove from the wok and set aside.
  4. In the same wok, add another tablespoon of vegetable oil. Add minced garlic, ginger, sliced bell pepper, and onion. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  5. Return the cooked beef to the wok and mix everything together. Season with additional salt and black pepper if needed. Stir-fry for another 2-3 minutes.
  6. Garnish with chopped spring onions before serving.
