- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 5 pieces, adjust to taste
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, minced
- Soy sauce (low sodium) - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Bell pepper (red or green) - 1 medium, sliced
- Onion - 1 medium, sliced
- Spring onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, and a pinch of salt. Marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add Sichuan peppercorns and dried red chilies, stirring until fragrant.
- Add the marinated beef to the wok, spreading it out to ensure even cooking. Stir-fry for about 5-7 minutes until the beef is browned and cooked through. Remove from the wok and set aside.
- In the same wok, add another tablespoon of vegetable oil. Add minced garlic, ginger, sliced bell pepper, and onion. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the cooked beef to the wok and mix everything together. Season with additional salt and black pepper if needed. Stir-fry for another 2-3 minutes.
- Garnish with chopped spring onions before serving.
