- Chicken wings - 500 grams
- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 5 pieces
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Chili oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped (for garnish)
Steps
- In a small bowl, mix the soy sauce, rice vinegar, honey, chili oil, sesame oil, salt, and black pepper to create the marinade.
- In a spice grinder or mortar and pestle, grind the Sichuan peppercorns and dried red chilies into a coarse powder.
- Add the ground spices, minced garlic, and minced ginger to the marinade and mix well.
- Place the chicken wings in a large bowl or a zip-lock bag, pour the marinade over them, and ensure they are well coated. Marinate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your oven to 200°C (400°F). Line a baking sheet with aluminum foil and place a wire rack on top.
- Arrange the marinated wings on the wire rack in a single layer, discarding any excess marinade.
- Bake in the preheated oven for 25-30 minutes, turning the wings halfway through, until they are golden brown and crispy.
- Once done, remove from the oven and let cool for a few minutes before garnishing with chopped green onions.
- Serve hot with your favorite dipping sauce.
