- Firm tofu - 300 grams
- Red bell pepper - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Sichuan peppercorns - 1 teaspoon
- Red chili flakes - 1 teaspoon (adjust to taste)
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped (for garnish)
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Press the firm tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
- In a non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic, ginger, and Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant.
- Add the sliced red and green bell peppers and julienned carrot to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Stir in the red chili flakes, cooked tofu, soy sauce, rice vinegar, and sesame oil. Mix well and cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
