Ingredients

  • Firm tofu - 300 grams
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Sichuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped (for garnish)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Press the firm tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
  2. In a non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic, ginger, and Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant.
  4. Add the sliced red and green bell peppers and julienned carrot to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Stir in the red chili flakes, cooked tofu, soy sauce, rice vinegar, and sesame oil. Mix well and cook for another 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
