Ingredients
- Firm tofu - 200 grams
- Bell pepper (red or green) - 1 medium, diced
- Zucchini - 1 medium, sliced
- Carrot - 1 medium, julienned
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Sichuan peppercorns - 1 teaspoon
- Dried red chili peppers - 2, or to taste
- Soy sauce (gluten-free) - 2 tablespoons
- Chili oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped for garnish
- Sesame seeds - 1 tablespoon for garnish
- Salt - to taste
Steps
- Press the tofu for 15 minutes to remove excess water, then cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic, grated ginger, Sichuan peppercorns, and dried red chili peppers. Stir-fry for about 30 seconds until fragrant.
- Add the diced bell pepper, sliced zucchini, and julienned carrot to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Return the fried tofu to the skillet. Pour in the gluten-free soy sauce and chili oil. Stir well to combine and cook for another 2-3 minutes, allowing the flavors to meld.
- Taste and add salt as needed. Remove from heat.
- Serve hot, garnished with chopped green onions and sesame seeds.
