  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 2 pieces
  • Tofu, firm - 150 grams, cubed
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Baby bok choy - 100 grams, chopped
  • Green onions - 2 stalks, sliced
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger for 1-2 minutes until fragrant.
  2. Add the Sichuan peppercorns and dried red chilies, sautéing for another minute to release their flavors.
  3. Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
  4. Stir in the soy sauce and let it simmer for 5 minutes to allow the flavors to meld.
  5. Add the cubed tofu and sliced mushrooms to the pot, cooking for an additional 5-7 minutes until the mushrooms are tender.
  6. In the last few minutes, add the chopped baby bok choy and season the soup with salt and black pepper to taste.
  7. Remove the pot from heat and garnish with sliced green onions and chopped cilantro before serving.
