- Baby bok choy - 100 grams, chopped

- Cilantro - a handful, chopped

Steps
- In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger for 1-2 minutes until fragrant.
- Add the Sichuan peppercorns and dried red chilies, sautéing for another minute to release their flavors.
- Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
- Stir in the soy sauce and let it simmer for 5 minutes to allow the flavors to meld.
- Add the cubed tofu and sliced mushrooms to the pot, cooking for an additional 5-7 minutes until the mushrooms are tender.
- In the last few minutes, add the chopped baby bok choy and season the soup with salt and black pepper to taste.
- Remove the pot from heat and garnish with sliced green onions and chopped cilantro before serving.
