- Jasmine rice - 150 grams
- Water - 300 ml
- Sichuan peppercorns - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Green beans - 100 grams, chopped
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Spring onions - 2, chopped
- Cilantro - a handful, chopped
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- In a frying pan, heat the vegetable oil over medium heat. Add Sichuan peppercorns and sauté for about 1 minute until fragrant.
- Add minced garlic and ginger, cook for another minute until fragrant.
- Add the diced red bell pepper, carrot, and green beans to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the cooked rice, soy sauce, and chili oil. Mix thoroughly and stir-fry for another 2-3 minutes to combine flavors.
- Remove from heat and garnish with chopped spring onions and cilantro before serving.
