- Raw peanuts - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 3, whole
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Green onions - 1, finely chopped (for garnish)
Steps
- In a pan over medium heat, add the raw peanuts and dry roast them for about 5-7 minutes until they are golden brown, stirring frequently to prevent burning.
- Remove the peanuts from the pan and set aside. In the same pan, add the vegetable oil and heat it over medium heat.
- Add the minced garlic, Sichuan peppercorns, and dried red chilies to the oil. Sauté for about 1-2 minutes until fragrant.
- Reduce the heat to low and add the previously roasted peanuts back into the pan.
- Stir in the soy sauce, rice vinegar, sugar, and salt. Mix well to ensure the peanuts are evenly coated with the seasoning.
- Cook for an additional 2-3 minutes, stirring continuously until the peanuts are well-glazed and aromatic.
- Remove from heat, transfer to a serving bowl, and garnish with chopped green onions. Serve warm or at room temperature.
