Ingredients

  • Raw peanuts - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 3, whole
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions - 1, finely chopped (for garnish)

Steps

  1. In a pan over medium heat, add the raw peanuts and dry roast them for about 5-7 minutes until they are golden brown, stirring frequently to prevent burning.
  2. Remove the peanuts from the pan and set aside. In the same pan, add the vegetable oil and heat it over medium heat.
  3. Add the minced garlic, Sichuan peppercorns, and dried red chilies to the oil. Sauté for about 1-2 minutes until fragrant.
  4. Reduce the heat to low and add the previously roasted peanuts back into the pan.
  5. Stir in the soy sauce, rice vinegar, sugar, and salt. Mix well to ensure the peanuts are evenly coated with the seasoning.
  6. Cook for an additional 2-3 minutes, stirring continuously until the peanuts are well-glazed and aromatic.
  7. Remove from heat, transfer to a serving bowl, and garnish with chopped green onions. Serve warm or at room temperature.
