Ingredients

  • Whole wheat noodles - 150 grams
  • Sesame oil - 2 tablespoons

  • Ginger - 1 teaspoon, grated
  • Sichuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Cooked chicken breast - 100 grams, shredded (optional)
  • Baby spinach - 100 grams

Steps

  1. Cook the whole wheat noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat and add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add Sichuan peppercorns and red chili flakes to the skillet, stirring for another 30 seconds.
  4. Pour in the soy sauce and rice vinegar, mixing well to combine.
  5. Add the cooked noodles to the skillet, tossing to coat them evenly with the sauce.
  6. Stir in the shredded chicken (if using) and baby spinach, cooking until the spinach wilts, about 2 minutes.
