  • Red bell pepper - 1 medium, thinly sliced
  • Spring onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Sichuan peppercorns - 1 teaspoon
  • Sesame oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 tablespoon

Steps

  1. Bring a pot of water to a boil and cook the gluten-free rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.

  3. In a large mixing bowl, combine the cooked noodles, cucumber, carrot, red bell pepper, spring onions, and cilantro.
  4. In a separate bowl, whisk together the sesame oil, soy sauce, rice vinegar, chili oil, sugar, and crushed Sichuan peppercorns to create the dressing.
  5. Pour the dressing over the noodle and vegetable mixture and toss well to combine. Adjust salt to taste.
  6. Serve immediately or chill in the refrigerator for 10 minutes before serving for enhanced flavors.
