Ingredients

  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 5-6 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Chili bean paste (Doubanjiang) - 1 tablespoon
  • Vegetable oil - 3 tablespoons
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Cornstarch - 2 tablespoons
  • Water - 200 ml

Steps

  1. Rinse the fish fillets under cold water and pat them dry with paper towels. Cut them into bite-sized pieces and season with a pinch of salt and 1 tablespoon of cornstarch. Let them marinate for about 10 minutes.
  2. In a wok or large skillet, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and dried red chili peppers, cooking until fragrant (about 1-2 minutes).
  3. Add the minced garlic and ginger to the wok, stirring frequently until they become golden brown (about 1-2 minutes).
  4. Stir in the chili bean paste and soy sauce, mixing well. Then, add the sugar and water, bringing the mixture to a simmer.
  5. Carefully add the marinated fish pieces to the wok. Cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. In a small bowl, mix the remaining cornstarch with a tablespoon of water to create a slurry. Slowly pour this into the sauce to thicken it slightly, stirring gently.
  7. Once the sauce has thickened, add the chopped spring onions and mix well. Cook for an additional minute.
  8. Serve the spicy fish hot, garnished with more spring onions if desired, alongside steamed rice.
