  • Chili paste - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onion - 2 stalks, chopped
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash the eggplants and cut them into 2-inch long strips. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
  2. Rinse the salted eggplant strips under cold water and pat them dry with a paper towel.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the Sichuan peppercorns and fry for about 30 seconds until fragrant.
  4. Add the minced garlic and ginger to the skillet and stir-fry for another minute until aromatic.
  5. Add the eggplant strips to the skillet and stir-fry for about 5-7 minutes until they are tender and slightly browned.
  6. In a small bowl, mix the gluten-free soy sauce, chili paste, red chili flakes, and sugar together.
  7. Pour the sauce over the eggplant and stir well to coat. Continue cooking for another 2-3 minutes until the sauce thickens slightly.
  8. Drizzle with sesame oil and stir in the chopped green onions. Cook for another minute.
  9. Remove from heat and garnish with fresh cilantro before serving.
