  • Duck necks - 4 pieces (approximately 400g)
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 6 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 2 tablespoons (gluten-free)
  • Chili oil - 2 tablespoons
  • Rice wine - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Clean the duck necks thoroughly and pat them dry with paper towels.
  2. In a dry skillet over medium heat, toast the Sichuan peppercorns and dried red chilies until fragrant, about 2-3 minutes. Remove from heat and let cool.
  3. Once cooled, grind the toasted spices into a fine powder using a mortar and pestle or spice grinder.
  4. In a bowl, combine the ground spices, minced garlic, minced ginger, soy sauce, chili oil, rice wine, sugar, and salt to create a marinade.
  5. Add the duck necks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1 hour for deeper flavor.
  6. Preheat a grill or grill pan over medium-high heat. Remove the duck necks from the marinade and reserve the marinade for basting.
