- Chili oil - 2 tablespoons
- Rice wine - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
Steps
- Clean the duck necks thoroughly and pat them dry with paper towels.
- In a dry skillet over medium heat, toast the Sichuan peppercorns and dried red chilies until fragrant, about 2-3 minutes. Remove from heat and let cool.
- Once cooled, grind the toasted spices into a fine powder using a mortar and pestle or spice grinder.
- In a bowl, combine the ground spices, minced garlic, minced ginger, soy sauce, chili oil, rice wine, sugar, and salt to create a marinade.
- Add the duck necks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1 hour for deeper flavor.
- Preheat a grill or grill pan over medium-high heat. Remove the duck necks from the marinade and reserve the marinade for basting.
