- Duck legs - 2 pieces (approximately 500g)
- Sichuan peppercorns - 1 tablespoon
- Dried red chilies - 5 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 inch, minced
- Soy sauce - 3 tablespoons
- Rice wine - 2 tablespoons
- Chili oil - 2 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Spring onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a small pan, dry roast the Sichuan peppercorns and dried red chilies over medium heat until fragrant, about 2-3 minutes. Allow to cool, then grind into a coarse powder.
- In a bowl, mix the ground spice blend with minced garlic, minced ginger, soy sauce, rice wine, chili oil, brown sugar, sesame oil, salt, and black pepper to create a marinade.
- Place the duck legs in a large zip-top bag or shallow dish and pour the marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
- Preheat your grill or BBQ to medium-high heat. If using a charcoal grill, allow the coals to ash over.
- Remove the duck legs from the marinade and shake off excess. Reserve the marinade for basting.
- Grill the duck legs skin-side down for about 15 minutes, then flip and continue grilling for another 15-20 minutes, basting with the reserved marinade occasionally, until cooked through and skin is crispy.
- Once done, remove from the grill and let rest for 5 minutes. Garnish with chopped spring onions before serving.
