Ingredients

  • Duck legs - 2 pieces (approximately 500g)
  • Sichuan peppercorns - 1 tablespoon
  • Dried red chilies - 5 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 3 tablespoons
  • Rice wine - 2 tablespoons
  • Chili oil - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small pan, dry roast the Sichuan peppercorns and dried red chilies over medium heat until fragrant, about 2-3 minutes. Allow to cool, then grind into a coarse powder.
  2. In a bowl, mix the ground spice blend with minced garlic, minced ginger, soy sauce, rice wine, chili oil, brown sugar, sesame oil, salt, and black pepper to create a marinade.
  3. Place the duck legs in a large zip-top bag or shallow dish and pour the marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
  4. Preheat your grill or BBQ to medium-high heat. If using a charcoal grill, allow the coals to ash over.
  5. Remove the duck legs from the marinade and shake off excess. Reserve the marinade for basting.
  6. Grill the duck legs skin-side down for about 15 minutes, then flip and continue grilling for another 15-20 minutes, basting with the reserved marinade occasionally, until cooked through and skin is crispy.
  7. Once done, remove from the grill and let rest for 5 minutes. Garnish with chopped spring onions before serving.
