- Live crab - 500 grams
- Sichuan peppercorns - 1 teaspoon
- Dried red chili peppers - 5-6 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cooking oil - 2 tablespoons
- Sugar - 1 teaspoon
- Salt - to taste
- Water - 100 ml
Steps
- Rinse the live crab under cold water and place it in a pot with boiling water for 5 minutes. Remove and let it cool.
- Once cool, clean the crab by removing the shell and gills, and cut it into quarters.
- In a large wok, heat the cooking oil over medium heat. Add Sichuan peppercorns and dried red chili peppers, frying until fragrant.
- Add minced garlic and ginger, stirring quickly to avoid burning.
- Add the crab pieces to the wok, tossing to coat them in the oil and spices.
- In a small bowl, mix soy sauce, rice vinegar, sesame oil, sugar, and salt. Pour this mixture over the crab in the wok.
- Add 100 ml of water, cover the wok, and let it simmer for about 10 minutes, stirring occasionally.
- Once cooked, sprinkle chopped green onions over the crab and serve immediately with steamed rice.
