- Sichuan peppercorns - 1 teaspoon
- Dried red chili peppers - 4-5, adjust to taste
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2, chopped
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Salt - to taste
Steps
- Press the tofu to remove excess moisture, then cut it into cubes and set aside.
- In a bowl, mix sliced chicken with cornstarch, salt, and 1 tablespoon of soy sauce. Let it marinate for 10 minutes.
- Heat a large non-stick skillet or wok over medium-high heat and add the chili oil.
- Add Sichuan peppercorns and dried red chili peppers to the oil, stirring for about 30 seconds until fragrant.
- Increase the heat to high and add the marinated chicken to the skillet. Stir-fry until the chicken is cooked through, about 5-7 minutes.
- Add minced garlic, ginger, and the cubed tofu, tossing gently to combine. Cook for another 3-4 minutes.
- Add the sliced bell pepper and julienned carrot, stir-frying for an additional 2-3 minutes.
- In a small bowl, combine the remaining soy sauce, rice vinegar, and water. Pour the sauce over the stir-fry, then add sesame oil and mix well.
- Cook for another minute until everything is heated through and the sauce is well incorporated.
- Garnish with chopped green onions before serving.
