Ingredients

  • Chicken breast - 200 grams, diced
  • Firm tofu - 200 grams, cubed
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 4-5, or to taste
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, toss the diced chicken with cornstarch, salt, and black pepper. Set aside for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the remaining vegetable oil. Add Sichuan peppercorns and dried red chili peppers, stirring for 1-2 minutes until fragrant.
  4. Add minced garlic and ginger to the skillet, sautéing for an additional 1-2 minutes until aromatic.
  5. Add the marinated chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  6. Stir in the cooked tofu, soy sauce, rice vinegar, and sesame oil. Cook for another 2-3 minutes, allowing the flavors to meld.
  7. Garnish with chopped green onions, and serve hot.
