Ingredients

  • 300g chicken breast - thinly sliced
  • 200g broccoli florets
  • 2 tablespoons vegetable oil
  • 1 tablespoon Sichuan peppercorns
  • 2 cloves garlic - minced
  • 1 tablespoon ginger - minced
  • 2 tablespoons soy sauce (gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 1 teaspoon sesame oil
  • 2 green onions - chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add the Sichuan peppercorns and toast them for about 30 seconds until fragrant.
  3. Add the minced garlic and ginger, stirring quickly to avoid burning, for about 30 seconds.
  4. Increase the heat to high and add the sliced chicken breast, cooking for about 5-7 minutes until the chicken is golden and cooked through.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of vegetable oil and the broccoli florets, stir-frying for about 3-4 minutes until bright green and tender-crisp.
  7. Return the chicken to the skillet and add the soy sauce, rice vinegar, chili paste, sesame oil, salt, and pepper. Stir well to combine and heat through for another 2-3 minutes.
  8. Sprinkle with chopped green onions before serving.
