  • Chicken breast - 300 grams, diced

  • Dried red chilies - 10 pieces
  • Sichuan peppercorns - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Scallions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Sugar - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. In a bowl, mix the diced chicken with cornstarch, salt, and half of the soy sauce. Let it marinate for 15 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the dried red chilies and Sichuan peppercorns, stirring until fragrant for about 1-2 minutes.
  3. Add the minced garlic and ginger to the skillet, cooking for another minute until aromatic.
  4. Increase the heat to high and add the marinated chicken to the skillet. Stir-fry until the chicken is browned and cooked through, about 5-7 minutes.
  5. Stir in the remaining soy sauce, chili paste, sugar, and black vinegar, mixing well to coat the chicken evenly.
  6. Add the chopped scallions and drizzle sesame oil over the dish, stir-frying for an additional 2 minutes.
  7. Serve hot with steamed rice or noodles.
