- Sichuan peppercorns - 1 teaspoon
- Garlic - 3 cloves, minced

- Scallions - 2, chopped
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Sugar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Salt - 1/2 teaspoon
- Black vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
Steps
- In a bowl, mix the diced chicken with cornstarch, salt, and half of the soy sauce. Let it marinate for 15 minutes.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the dried red chilies and Sichuan peppercorns, stirring until fragrant for about 1-2 minutes.
- Add the minced garlic and ginger to the skillet, cooking for another minute until aromatic.
- Increase the heat to high and add the marinated chicken to the skillet. Stir-fry until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the remaining soy sauce, chili paste, sugar, and black vinegar, mixing well to coat the chicken evenly.
- Add the chopped scallions and drizzle sesame oil over the dish, stir-frying for an additional 2 minutes.
