Ingredients
- Beef sirloin - 200 grams, thinly sliced
- Chinese eggplant - 200 grams, cut into bite-sized pieces
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Sichuan peppercorns - 1 teaspoon
- Dried red chilies - 3 to 5, whole
- Soy sauce (gluten-free) - 2 tablespoons
- Oyster sauce (gluten-free) - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Sugar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 3 tablespoons
- Spring onions - 2, chopped (for garnish)
Steps
- In a bowl, combine sliced beef with cornstarch and 1 tablespoon of soy sauce. Mix well and let it marinate for about 10 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil, then add Sichuan peppercorns and dried red chilies. Stir-fry for about 30 seconds until fragrant.
- Add minced garlic and ginger to the skillet, stirring constantly for another 30 seconds.
- Add the eggplant pieces to the skillet, cooking for about 5-7 minutes until they are tender and slightly browned.
- Return the cooked beef to the skillet. Add the remaining soy sauce, oyster sauce, rice vinegar, and sugar. Stir well to combine and cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped spring onions. Serve hot.
