Ingredients

  • Popcorn kernels - 1/2 cup
  • Sichuan peppercorns - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chili powder - 1/4 teaspoon
  • Dried parsley - 1 teaspoon (optional)

Steps

  1. In a dry skillet over medium heat, toast the Sichuan peppercorns for about 2-3 minutes until fragrant, stirring frequently to avoid burning.
  2. Once toasted, remove from heat and crush the peppercorns lightly using a mortar and pestle or the back of a spoon.
  3. In a large pot with a lid, heat the olive oil over medium heat. Add the popcorn kernels and cover the pot.
  4. Shake the pot occasionally as the popcorn pops, about 3-5 minutes, until popping slows down.
  5. Remove the pot from the heat and let it sit for a minute to allow any remaining kernels to pop.
  6. Transfer the popcorn to a large bowl and immediately sprinkle with the toasted Sichuan peppercorns, salt, garlic powder, and chili powder. Toss well to combine.
  7. If desired, sprinkle with dried parsley for added flavor and color. Serve warm.
